It looks like you're using a Custom Connected Account and you can manage its schedules: https://docs.stripe.com/connect/manage-payout-schedule at creation of the account.

Then, once the 21 days are up, you can update it to the new schedule: https://docs.stripe.com/api/accounts/update#update_account-settings
