if it's a Separate Charge and Transfer scenario you're looking for
you would create the PaymentLink on the Platform level as if you're collecting it for yourself

you don't care about the first 2 steps in that doc

to be more precise
the only difference is instead of creating a Checkout Session each time you would create a PaymentLink and then everything else would be the same
since a PaymentLink will generate the CheckoutSessions each time a customer visits that link
