I have gone through the API docs but could not find anything

When you create a payment intent, it has a parameter latest_charge (https://docs.stripe.com/api/payment_intents/object#payment_intent_object-latest_charge). When you expand it (https://docs.stripe.com/api/expanding_objects), you will get the balance_transaction object (https://docs.stripe.com/api/charges/object#charge_object-balance_transaction). You can retrieve the balance transaction (https://docs.stripe.com/api/balance_transactions/retrieve) and it will have the exchange_rate parameter.
