You didn't ask to add Subscrtiption metadata, only Checkout Session metadata.

Because Stripe and its many objects are very complicated, and because that is one possible way it could behave, but not the way everyone wants it to behave.

That seems reasonable. There are lots of reasons we might need to do that; the rules and laws around this are incredibly complex at global scale - it's really hard for most folks to wrap their head around just how hard it is to build things that operate at that scale.
