It's generally preferable to persist the payment intent and update it, but you're free to instead cancel and re-create a new one if that works better for you
It's more efficient and a better record of customer behaviour to update the existing PI, though
Canceling a PI and creating a new one is 2 API write requests, updating the existing PI is just 1
