If we want to collect payment details (klarna or card), do some other UI steps and buy after, potentially, some days, is there any other payment flow which can be used?

i think the only other flow which can be used is the https://docs.stripe.com/payments/place-a-hold-on-a-payment-method which place an hold (locking) on funds

Place a hold on a payment method

Use manual capture to temporarily reserve funds without immediately charging the payment method.

You can save a Card and authorize it later.

But for Klarna, yeah you would have to use manual capture which would authorize immediately.
