Our test mode will simulate what our live mode does properly, but I don't think it will show that behavior in advance. Looking into what you can do here
So we let you set fields to never show up, but we don't have an always setting. The typical workaround here is that for fields you always want to collect, you disable them in the payment element, add fields to collect them in your page, and then pass them to us in the confirm call that you make later
