Unfortunately, there's no way to do that. If you don't provide a country, we default to the Platform country instead - https://docs.stripe.com/api/accounts/create#create_account-country
You'd want to have some form in your application that let's your connected account choose their country and then you can call the API & prefill the country when you create the connected account

Can't I update the country later during onboarding process or from the express dashboard that we are providing?
Nope, that's not possible with the API today
Ohh.. Is it the same case with their default currency?
