Best we can tell the way to send a receipt is update the PaymentIntent with a receipt_email value after the session completes. This could be any address, not necessarily what customer entered?
This is correct, that is the way to do it
and yes you can provide any email, either one you copy from the checkout session details or one you have from the customer another way
It's expected that emails are not sent in test mode
For most emails, if you using your own account email (the one you log into the dashboard with), you should receive the email in test mode
