OK, so your question is why Metamask app doesn't show up the options for you to connect a wallet?

Metamask app isn't developed by Stripe, so I'm afraid that I can't answer this quesiton on behalf of them.

If you don't wish to provide crypto as a payment method for your customer, you can remove it from payment_method_types when creating a checkout session

The last questions:

  1. Is there some difference in Stripe when I try to connect to Metamask or Phantom or logic that triggers this connection is same for both wallets?
  2. Is there an option to remain crypto payment but just remove a Metamask from a wallet list in Stripe?

  1. It should be the same. There's a possibility that the Metamask app that you are currently using may not have capability of handling the deeplinking for wallet selection. Perhape you want to update the app the latest version and try again?
  2. No i don't see a options to filter the wallet list
