OK, I think it's because of your settings here. You have it set to cancel the sub when all retries fail and, as we don't support SEPA Debit retries, the initial payment failure constitutes a cancellation

That's your update call that triggered the invoice that ultimately failed. So yes, it is related but not the cause
AFAIK, we don't retry failed recurring payments with SEPA Debit no. Trying to confirm

for SEPA there are no automatic retries by default. but we have a beta to enable this if you are interested: https://docs.stripe.com/payments/sepa-debit#sepa-debit-retries

I confirm that the Subscripion was cancelled because the payment failed. But I don't get why the PaymentIntent is now in a processing state.
since this is a livemode payment, I would recommend to ask Stripe support directly: https://support.stripe.com/contact
make sure to share all the relevant object IDs.
