After that, it switches to a recurring 3 month subscription. [this is a new phase, and has it's own price, for the same product]
Unfortunately Chekcout doesn't yet support configuring schedules at creation time
So the way to do this is as you describe, creating the subscription first via checkout then adding a schedule afterward
Or, alternatively, create the subscription directly via the schedule and manage the customer initiation and first payment in your own application instead of Checkout

Is the initial phase just a lower price?
Because there's a way to achieve a similar outcome via checkout if the goal is a discounted initial period
No, it's actually a higher price - and there are more multi-phase offerings we'll be experimenting with
you can:
1/ Provide your normal 3mo price
2/ Set up a trial period for 3mo (initial period)
3/ Add a one-time payment to the session line_items to be paid up front for the initial period
this would work with a higher price too, or you could skip the trial and just add a "sign up fee" for the extra amount etc
Neat solution for that case
the point being you can add one-time payments mixed with subscription sign up (with or without a trial period)
