Just for a little more context, we development websites for clients, we will charge a 1 time fee for development then charge a monthly fee after development is done for hosting/support.

SetupIntent is better if you only save the info first time, but don't charge it. PaymentIntent + setup_future_usage means you charge it and save the info

Ok so we are saving a step with PaymentIntent + setup_future_usage means you charge it and save the info. (We charge and save in one, instead of saving then charging)

This is a different question, right? And I think it's totally up to you 🙂 You can have 1 Products with multiple Prices too
