So I need to open a support ticket to request a specific version be set?
We are using application level Stripe API version using the ruby SDK...but I need to be able to add a new webhook endpoint that targets a specific API version, and I can't do that in the Workbench UI

Yes, or you can specifically set the API version of your API calls and your Webhook Endpoints.
