You can customize what is required and what is not when using Stripe Hosted onboarding:
https://docs.stripe.com/connect/required-verification-information

If you want to make the collecting of any additional field, you can add an extra step in your inregration and collect that mandatory field for it.

Thanks for the response, I looked at this table before but I still can't find the VAT number configuration here. Am I missing something?

If you don't find it then yes it's not required for your integration.

Okay, is there a way to make it required? In the settings I don't really see any of that specified?

No. you can't.

As your integration is requiring it, then your integration needs to collect it.
