Hi there ๐ the option to suppress the name field is currently not supported by the Address Element. Only the phone field can be suppressed:

Can I disable it so they can't edit it?
No you can't, but I can file feedback with our teams that both of these are features you'd be interested in seeing added in the future.

One other question -- our account is currently in test mode (we won't be accepting payments for a month or so) but in the mantime want to use the Address Element. Is there any issue with keeping it in test mode for the time being?
Accounts aren't in testmode versus livemode. Integrations opearte in either testmode or livemode based on the API keys being used. It's perfectly fine to leave a testmode integration running for testing and development purposes.
