Oh... Additionally, is it possible to create fake tax forms in the Stripe dashboard & trigger their status so that I can test my webhook?

One other thing, if I update a connected accounts email/address with the test api key - it won't effect the CA's real information right? (I'm wanting to go to the CA in the Stripe dashboard, turn on the "test" toggle, then make the update call in my test environment using the test api key, then see the change happen in the Stripe Dashboard)

I just want to be sure that's how it works so I don't break something accidentally

yeah, chaging test information on your test accounts should not impact your live account information. Please make sure that you're using your test API key when making these changes.
