the best way to know is to actually test this in test mode. but I think it would just work as expected:
- the product/price will be archived, so you won't be able to use it for new subscriptions
- but the existing subscrition will keep working

I'm not sure I understand your question
but you can test everything in test mode yes
and you can use Test Clocks for this: https://stripe.com/docs/billing/testing/test-clocks
