are you using an API key that has pk_test_xxx format?
yes, same as local
actually this ${process.env.NEXT_PUBLIC_STRIPE_PUBLISHABLE_KEY} || 'api_key_placeholder' means that if the NEXT_PUBLIC_STRIPE_PUBLISHABLE_KEY is not in the environment variables than it will default to api_key_placeholder and this might be what's happening here
I'm putting some logs around and from what i can see in the logs they are showing the process.env.NEXT_PUBLIC_STRIPE_PUBLISHABLE_KEY is there.
Also on the machine i can see them. It's a bit weird
