For this kind of flow, we recommend creating Connected Accounts for each separate bank account you need funds to land in. You can collect charges on your main (Platform) account and then transfer the funds to each Connected Account.
The "multiple separate accounts" doc is more about business entities that are independent of each other but still related.
I recommend you start by reviewing our docs on Stripe Connect a see if that makes sense for your use case.

Depending on currencies used and currency exchanges, some approaches can be more advantageous than others.
I'm still reading through this. Is the idea that we'd create multiple Stripe accounts for each payout account and connected them?
Correct. Each Stripe Account would have their own external bank account where the funds transfered to that Stripe Account would get deposited
