Hello! The defaultValues only apply when the Address Element is first rendered. There's no way to update them later because doing so wouldn't have any effect.

You can't. Once the Address Element is rendered it's up to your customer to fill it out.
If you need that level of control you'd need to switch to using your own address form and stop using the Address Element. Or you'd need to wait to render the Address Element until you're sure you have the final defaults you want to use.
