For example stripe login user@gmail.com could have 3 stores. Store A, B, C. Can we link users to a specific store so after sign in they’re seeing the dashboard for Store C specifically without having to select it from the top left hand toggle.

Unified account beta has been public. You shouldn't need this header any more.
When returning to the Dashboard, I'm afraid it's not impossible to indicate the account with your platform that the connected account holder can be redirected to
