also I can't find a way to reproduce this on sandbox, to test this I need to release to production each time I make change. Therefore I haven't tried lots of things. On sandbox there is nothing about permissions

I think it's a bank account name

I'm not sure about the flow as screnshoot comes from my client, but if you say it's not stripe UI then perhaps it's on bank side. Nevertheless looks like stripe asks bank for lots of things

Does this happen with any other bank?
This particular bank might be just listing the same permissions every time.

ok, we will use the same bank with Plaid flow to compare screens and then use other bank account to see if there are any differences, give me few minutes
