You can go about this in a couple of different ways
I recommend creating a Customer object in your backend first using any details you already have about the customer, including their email address. At that point, you can also add metadata on the Customer that matches the ID from your app
Once you have a Stripe Customer ID, pass that as the value for customer when creating the Checkout Session: https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-customer
