The manual payouts approach would be one recommendation in this scenario. https://docs.stripe.com/connect/account-balances#holding-funds
The other recommendation would be to 1) check your Account Balance (either in the Dashboard or via the API) and, if necessary, 2) perform a Top Up prior to generating the transfers https://docs.stripe.com/connect/top-ups

So it looks like there is no way to hold specifically the funds that were charged to the customer and need to be routed to the connected account?
Not with the asynch payment methods, I am afraid.
