That's not something that's meant to be done, those colours should be set via the branding settings: https://docs.stripe.com/payments/checkout/customization/appearance?payment-ui=embedded-form#branding
Can you say more about why you're trying to override like this?
I just want to override the embedded component background colour since it will appear on a page that can be any colour. So if the embedded component appears on a page that is a different colour than what is in the branding section, it could look odd.
Or I could do the opposite and if I could get the branding background colour set by the account first and then use that value on my frontend?
Yes, if you want these coordinated like you describe you'd need to colour your page to match the branding, but keeping in mind those settings might change.
