You should really listen for checkout.session.completed events if you're using Checkout/Payment Links. There you can use the customer_details hash to get the completed fields from the payment page
Otherwise receipt_email is only set if you explicitly set it and billing_details[email] will mirror the value the customer enters on the payment page

Thanks, but what if we want to sync historic data? Before we introduce listening for the webhook. Is it enough to collect billing_details[email] from previous charges?
