when you place a hold, you have to capture the funds within ~7 days yes
you could ask Stripe support if you can get access to extended authorization: https://docs.stripe.com/payments/extended-authorization
after 7 days should we create new payment intent if we have still not capture the payment?
you could. but creating a new PaymentIntent can fail for a variety of reasons.
Is customer notified when hold is placed or removed?
it depends on their bank I guess
