So when schedule is released, and if we update the subscription then will it create a new schedule on that subscription or will it just update the subscription?
It will just update the Susbcription
I invite you to make some tests using Stripe Test Clocks to understand this behaviour.
In test environment, how to make a subscription schedule to release. We can find release status only on live environment.
You can update an existing Subscription Schedule to release as an end behavior:

Then you advance the simulation after the end of cycle
I have already defined the end behaviour to release when creating subscription schedule.
And have you created a test simulation in order to be able to advance time?
If not, you need to create a test simulation and a new Subscription Schedule
why a new subscription schedule? Why not on an existing scheudle and advance the time using simulation?
The Subscription needs to be attached to the simulation.
Each test clock simulation has its own Schedules/Subscription
