I asked for prefill for LInk element

But these are used after customer has filled in card details, we call the confirm payment method.

I see you are passing to defaultValues but this options is used on an update function? We expect to pass defaultValues on Elements initialization: https://docs.stripe.com/payments/link/add-link-elements-integration?link-integration-type=before-payment&defaultValues-integration-type=before#prefill-customer-data
The documentation here mentions you can pass it in as updates

Yeah that works too, but it requires to call the function on the onBlur callback

I would say try the initialization way first to see if it works
So this updates should only triggered by a user interaction, and the user interaction we recommend is the onBlur event on your own input field (not PaymentElements's fields)
says you have an input to collect the email yourself, id is #my-input-id. You would want to listen to it's onBlur event, then grab its value (customer inputted value) and update to PaymentElements
