hi there!
yes with Checkout you can use Tax Rates. and you can set the expiration here: https://docs.stripe.com/api/checkout/sessions/create?lang=java#create_checkout_session-expires_at for up to 24 hours. you could contact Stripe support to get up to 7 days expiration.
however note the main difference between Payment Links and Checkout Sessoin:
- one PaymentLink can be reused by many users
- one Checkout Session can only be used once
