Is there a way to configure the billingPortal.sessions.create request (or any related API) to display only prices associated with the subscription passed in the subscription_update flow

Hmm, that's the problem, you should set one when creating a session.

would it be ok to create a new configuration every time we genarate a portal url with billingPortal.sessions.create

since we won't be able to fetch old configuration with subscription or product data

also can we set eligible products with configuration for current session? stripe portal requires us to add at least one eligible product when we allow update

The products are configured through the billing portal configuration, not on the billing portal itself.

Yes you can create a new configuration for each session. You can also set the configuration to inactive if you don't have plan to reuse it in the future
