Will this affect our churn rate and Trial conversion rate in stripe reporting?
I'd imagine so yes. We don't really know how that data is actually calculated though
Is there a way around this?
You could jsut upgrade/downgrade their existing subscription to the new plan and keep the trial in place, rather than cancelling and creating a whole new sub

Is this possible? Would I just modify the existing subscription's price? i thought that doing this automatically ended the trial days

You can just reset trial_end as you need in the same update request, yep
