this is expected with the payout schedule you're currently on
at the time of creating the transfer the charge in the source_transaction has already been paid out and you don't have sufficient balance to cover the transfer

What can I do to make sure the transfers are created before the source_transaction is paid then?

you need to create them before the 3 days delay you setup in your payouts settings
or you can shift to a manual payout

In test mode I already tried creating a transfer in USD but got an insufficient funds error because even if I had funds in EUR, I didn't have in USD. How can I create transfers using my Stripe balance in different currencie?

why do you need to do that?

Because the ambassadors in my platform can have Stripe Connect accounts in different currencies

to use top-ups with connected accounts your account must be in the US

Should be possible I think yes, there'll just be FX for the transfer to settle in their non-EUR balance

When I check my balance using the Stripe CLI, I have 4 amounts but I cannot find them on the Stripe web UI. Can you explain where I can see all the balances please?
