No I don't think there's a way to try this in Test mode unfortunately.

What we want to confirm is whether the change is also reflected in our system via webhooks. If we copy the payment method update link from the Stripe dashboard to test this, does it function the same way as the link in the emails?

I am not sure it's sending webhook notifications, where are you seeing that info?
