Hello! You would probably want to use a Subscription Schedule for that: https://docs.stripe.com/billing/subscriptions/subscription-schedules
Note that you won't be able to use Stripe's trial functionality; Stripe Subscription trials are always free.
Essentially you would have a 7 day $1 Price for the first phase, then the normal monthly Price after that.

and just a random question, is there a way to pro-rate or automatically return that $1 if the user cancels the subscription in the first phase? or not possible

You mean you want to refund them the $1 if they cancel?
If so, you can listen for Subscription events and, when a Subscription ends and matches the criteria you want, you can then kick off a refund: https://docs.stripe.com/billing/subscriptions/overview#subscription-events
