do we have any payment method ids (like pm_card_visa to test out apple pay?)

hello! No, you need to use your own Apple wallet to make payment. It needs to have a real card inside. If you're using the test API key, it will not charge your card.
I currently don't have an apple device, I want to test out the wallet field that would show up in the payment_method object, will there be any pm_card_visa_apple_pay payment methods for testing in future?

I assume apple pay works differently, as it has the 3ds cryptogram and it processes the payment without attempting any 3 domain secure authentication

yes, Apple Pay doesn't require 3DS since it's authenticated with an equivalent cryptogram like a face id
