Can I use an existing pm_xxxxxxx and add it to a Stripe customer, so this payment method can be use to debit this customer ?

you would need to change your integration to achieve this. but since I know nothing about how Shopify integrates with Stripe, it's difficult to help.

I understand a pm is a payment method right ? Why this payment method cannot be attached to 2 customers ? Some customers have 2 active subscriptions on my case

because it's just not how our API works. A single PaymentMethod object can only be used with a single customer. You can create a second object that is the exact same underlying details(same card number etc) and attach that to a different customer, but it's a different object.
