  1. You can slowly upgrade by specifying API version explicitly for each individual request: https://docs.stripe.com/upgrades
  2. No, unfortunately you will only be able to upgrade to the latest version. It will take a bit more time, but you will have access to most new features for a while.

Hi Vanya perfect thank you very much, one question for this when we upgrade to the latest version in our dashboard, and in the apiVersions we specify the version that is lower, will this have any conflicts? Will the API support this?]

Yes, you should be able to specify any API version on requests explicitly.
