The API explicitly says that if I want to use adaptive pricing, I'd need to remove the Currency Field. But then, how can I define the base price (that should be in USD)?
Ex: I want the product to be $500USD and be automatically converted for the user's currency.

Not the currency parameter for the Price.
I recommend you review the restrictions more closely, make sure none of them apply, and then test again.

My settlement currency is BRL, and I need to define the prices in USD (That's because I like to sell the products in a different price for USD clients, so I do not intend to use the automatic conversion in this case).
