We believe the JSON error is based on the Stripe API

That's not really enough information to go on, unfortunately. Do you have access to more verbose logs? Why do you think this has something to do with the Stripe API?

It seems like these errors are happening during the build phase, which doesn't seem like the phase when the Stripe API would be involved?

This only started happening after we changed the Stripe API keys in the .env files from "live" to "test" keys
