hi! there isn't really a recommended approach, it's not possible when using a PaymentLink. You'd need a more bespoke integration

I'm using the Stripe elements component component on the frontend and dynamic payment methods

then if you use an approach like https://docs.stripe.com/payments/finalize-payments-on-the-server you can see the PaymentMethod type/details before confirming the Intent and can set the fee that that point
