sure, by default if you use Payment Links or Checkout Session or the Payment Element, no Inovices are created.
Can it be created with adhoc line items withut having to create them as products/services?

for Payment Links, you need to create a Price/Product first. you cannot use adhoc line items.
what does that mean?
For a Stripe invoice, payment can be automatically collected when there is a default payment method on file. Is such an option available for payment links?
no. but if you arelady have a saved payment method, why use a Payment Link? instead you could directly create a PaymentIntent and charge the customer automatically.
