You need to use this parameter when creating your Checkout Session to set metadata on the generated Subscription (and associated customer.subscription.* events): https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-subscription_data-metadata

what would you recommend for an event that only runs when a free trial starts?
and which event is the best for when a subscription payment is received, I know we have checkout.session.completed and the invoice one. Which is best practice?

There isn't one really specific to a trial period. Instead you'd just look at the related event for any trial indicators
