Apple Pay with Stripe Tax displays only when the customer’s browser supports Apple Pay version 12.

FWIW, if even if your Stripe account is US based Indian based customers won't be able to use Apple Pay: https://support.stripe.com/questions/supported-payment-methods-currencies-and-businesses-for-stripe-accounts-in-india

So if you're located in India right now, Apple Pay is not supported for you
