What I would really like to do is make it as easy as possible for users to add a default payment method to attach to their subscriptions, to enable automatic billing
You can achieve this with the Customer Portal

Just to update: While maybe not ideal for all cases, I have found that if my code creates a subscription that is set to send an invoice, and I set up a webhook to listen for the invoice.paid event, the code can then set subscriptions to be collected automatically following the first invoice, since there is now a payment method on file for the user.
