Hm this is odd. The card payment method should have never been allowed to be set as default_payment_method in the first place

Ok this appears to be a bug. We'll file this with the owning team, so I recommend writing into support: https://support.stripe.com/contact to get notified about updates.

In the mean time, you should be able to get around this by setting payment_settings.payment_method_types=['card','paypal'] while setting cancel_at https://docs.stripe.com/api/subscriptions/update#update_subscription-payment_settings-payment_method_types
