Depends on what the desired behaviour is? When do you want to cancel the sub? If at the end of the period, then yes
Otherwise you can cancel the schedule and it'll cancel the subscription immediately too: https://docs.stripe.com/api/subscription_schedules/cancel

Then yes what you originally described is the correct way – release then update cancel_at_period_end on the sub
