I suspect it might just use the device language. Is it not the behavior you're observing?

No, because the language of my app it can be different of the device language, so the payment sheet need to be in app language

I don't see settings on the PaymentSheet configuration. Are you passing a Customer to the PaymentSheet? You can set the preferred locale on the Customer object: https://docs.stripe.com/api/customers/update#update_customer-preferred_locales
