These are the only parameters supported to list checkout sessions: https://docs.stripe.com/api/checkout/sessions/list
you can't list them using shipping_rate

are you asking how you can retreive shipping rate details NOT checkout sessions?
If so, we have an endpoint here that lets you retrieve a specific shipping rate which should include its display name - https://docs.stripe.com/api/shipping_rates/retrieve
OR you can list all shipping rates - https://docs.stripe.com/api/shipping_rates/list
